South West Chicken Nachos Supreme

INGREDIENTS:
4 Elmira Fully Cooked South West BBQ Boneless Breasts, thawed and diced.
  • ¼ cup (50ml) onion
  • 2 cloves garlic, minced
  • 1 tbsp (15ml) chili powder
  • 1½ tsp ground cumin
  • 1 package tortilla chips
  • ¼ cup (50ml) ripe olives, sliced
  • 3 tbsp (45ml) diced green chilies
  • 2½ cup shredded Cheddar Cheese

DIRECTIONS:
Heat oven to 350°F. In a nonstick skillet, combine onion, garlic and diced chicken. Cook over medium-high heat for 5-8 minutes or until heated through, stirring frequently.

Spray 13x9 inch pan with nonstick cooking spray. Layer one-half of chips in pan and top with ½ cup cheese, one-half of the chicken mixture, olives and green chillies. Repeat layers. Top with remaining 1½ cup cheese. Bake for 15-20 minutes or until hot and cheese melts completely.

If desired, top with chopped tomatoes and serve with sour cream, salsa or guacamole.

Makes 6 servings.
