Mango Salsa
A light, refreshing addition to grilled chicken or chicken salad.

INGREDIENTS:
Elmira Boneless "Choice" Chicken Breasts
  • 2 mangoes, peeled, pitted, and cut into ¼” cubes
  • 3 Tbsp freshly squeezed lime juice
  • 2 Minced Jalapeno chilies – seeds, membranes removed
  • 3 finely sliced onions
  • 2/3 cup lightly packed cilantro leaves, stem removed, coarsely chopped

DIRECTIONS:
Combine all ingredients in a bowl and mix thoroughly with a fork. Reserve.

Spoon over grilled chicken breasts, roasted thighs, or over a chicken salad.
