GRILLED TURKEY SAUSAGE SANDWICHES

INGREDIENTS:
  • 4 Elmira Poultry Turkey Sausages defrosted
  • 1 tbsp (15ml) olive oil
  • 1 onion chopped
  • 1 garlic clove minced
  • 1 sweet red pepper coarsely chopped
  • a pinch of hot pepper flakes
  • 1 can (14oz) Italian spice stewed tomatoes
  • 2 tbsp (30ml) fresh parsley chopped
  • ¼ tsp (1ml) each salt and pepper
  • 4 crusty Italian rolls
  • 4 lettuce leaves
  • 4 tsp (20ml) freshly grated parmesan cheese

DIRECTIONS:
In a saucepan, heat oil over medium heat; cook onion and garlic stirring occasionally for 5 minutes or until softened. Add red pepper and hot pepper flakes; cook for 2 minutes. Stir in tomatoes, parsley, salt and pepper; bring to boil. Reduce heat and simmer for 20 minutes or until thickened.

Meanwhile, cut sausage lengthwise almost all the way through. Open and place, cut side down on greased grill over medium-high heat; close lid and cook, turning once, for about 5 minutes or until no longer pink.

Cut rolls in half lengthwise; toast cut side down on grill, for 2-3 minutes or just until golden. Top bottom half of bun with lettuce and sausage; spoon tomato sauce over top. Sprinkle with parmesan cheese, cover with top half of roll. Makes 4 servings.
