Garlic Pesto Chicken Sandwich

INGREDIENTS:
  • 4 Elmira Poultry Chicken First Sandwich Style Breasts or Chicken Burgers
  • ¼ tsp (1ml) salt
  • 4 Portuguese buns, halved
  • 4 lettuce leaves
  • 1 Large plum tomato, sliced 4 thin slices red onion

Garlic Pesto Mayonnaise:

  • ½ cup (125ml) mayonnaise
  • 1 tbsp (15ml) prepared pesto
  • 1 clove garlic, minced

DIRECTIONS:

Prepare Garlic Pesto Mayo in small bowl by mixing mayonnaise, pesto and garlic then set aside.

Prepare chicken according to directions. Sprinkle with salt. Toast cut side of buns, using a toaster oven or grill. Spread with Garlic Pesto Mayo; layer with lettuce, tomato, onion and chicken; place top of bun on top of chicken.

Try using other variations of vegetables and dressings. Also, for a lighter version use Elmira Poultry’s flavoured boneless breasts. For example, Honey Dijon, Lemon and Honey or Lemon and 4 Spice. Makes 4 servings.
