Elmira Chicken strips in a Tomato sweet Pepper Sauce

INGREDIENTS:
2 cups Elmira Poultry chicken strips
  • 1 28oz tin of crushed tomatoes
  • 1 28 oz tin of diced tomatoes
  • 2 cloves of garlic, minced
  • 1 onion, finely chopped
  • 1 green pepper, diced
  • 1 tsp dried oregano
  • 1 tbsp brown sugar
  • 1 tbsp olive oil
  • Salt and pepper

DIRECTIONS:
In a medium sized stock pot, sauté olive oil, onions and garlic until onions are soft (2 – 3 minutes).

Add peppers and continue sauté for 2 minutes. Add Tomatoes, sugar and salt and pepper. Simmer on low heat for 45 minutes and then add chicken - continue for 20 minutes.

Serve over a long noodle like Fettuccine.

Serves 6.
