Cajun Chicken, Roasted Tomato and Shrimp Salsa

INGREDIENTS:
8 Elmira Poultry Cajun Chicken Breasts
  • 1 lb Aqua Star cooked P & D large shrimp

Salsa:

  • ½ medium size onion finely chopped
  • 1 ½ - tbsp fresh limejuice
  • 6 medium roma tomatoes
  • 3 fresh jalapeño peppers
  • 1 clove of garlic peeled
  • ¼ cup coarse chopped cilantro
  • Salt and Pepper to taste

DIRECTIONS:
In a small bowl soak the onion in the limejuice for 15 minutes. In a dry skillet over high heat roast chilies/tomatoes and garlic.
  • 2 – 5 minutes for garlic
  • 8 – 10 minutes for chilies
  • 12 – 15 minutes for tomatoes

Pulse in a food processor or blender for 15 seconds (sauce should be chunky).

Add onion, cilantro, limejuice and shrimp season with salt and pepper.

Serves 8.
