| Apple & Maple Marinated Chicken Salad |

4 Elmira Poultry Boneless Chicken Breasts

DIRECTIONS: |
| In an air tight freezer bag combine
chicken, ¼ maple syrup, ½ of the basil chopped, and ¼ of the lemon
juice. Let marinade for 3 to 5 hours. Once marinated grill chicken until
cooked and set aside. In a mixing bowl combine mayonnaise, sour crème, olive oil, rest of the basil, and lemon juice, mix well and season with salt and pepper. ASSEMBLY: Combine chicken, walnuts, grapes, apples and lettuce in a large bowl. Add mayonnaise dressing and mix well. Arrange on plates and garnish with shaved parmesan. |
