Apple & Maple Marinated Chicken Salad

INGREDIENTS:
4 Elmira Poultry Boneless Chicken Breasts
  • 1 cup granny smith apples cut into matchsticks
  • 1 head of Bibb lettuce torn into small pieces
  • ¼ cup roasted walnuts
  • 1 cup sliced grape tomatoes
  • 1 bunch fresh basil
  • ½ cup real maple syrup
  • 2 lemons juiced
  • Shaved parmesan cheese
  • 3 tbsp mayonnaise
  • ½ cup olive oil
  • 2 tbsp sour crème
  • Salt and pepper to taste

DIRECTIONS:
In an air tight freezer bag combine chicken, ¼ maple syrup, ½ of the basil chopped, and ¼ of the lemon juice. Let marinade for 3 to 5 hours. Once marinated grill chicken until cooked and set aside.

In a mixing bowl combine mayonnaise, sour crème, olive oil, rest of the basil, and lemon juice, mix well and season with salt and pepper.

ASSEMBLY:

Combine chicken, walnuts, grapes, apples and lettuce in a large bowl. Add mayonnaise dressing and mix well. Arrange on plates and garnish with shaved parmesan.
