- 2 Tbsp olive oil
- 1 clove garlic, crushed
- 1 long baguette, sliced into thin wheels
- 6oz Manchego cheese*
*Note: Manchego cheese is a
sheep's milk cheese made in the La Mancha region of Spain.
Manchego is aged for 3 months or longer, and is a semi-firm
cheese with a rich golden colour and small holes. It ranges from
mild to sharp, depending on how long it is aged. If this is not
readily available, substitute your favourite gourmet cheese.
Tapas can also be broiled quickly to melt cheese before serving. |

Preheat oven to 350F. In a small glass bowl combine olive oil and
crushed garlic. On a parchment paper covered cookie sheet
arrange baguette wheels and brush with olive oil and garlic.
Bake until golden. Take them out of the oven and allow to cool
until needed.
Thaw sausages, either in the microwave or boiled in water.
Allow to cool slightly before cutting into thin �� slices. Place
2 slices of sausage over each piece of toasted bread and top
with a thin shaving of Manchego cheese. Serve and enjoy. |
