Dressing:
- 3 cloves garlic, finely chopped
- � cup orange juice
- Juice of 1 lime
- 1/3 cup rice wine vinegar
- � cup roasted peanuts of � cup peanut butter
- 3 tbsp soy sauce
- 1 Tbsp sugar
- 1 small dried chili
Salad
- 1 Head Boston lettuce
- Medium cucumber grated
- � sliced red onion
- 1 cup bean sprouts
- 1 medium red pepper, chopped
- 1 Tbsp sesame oil
- 2 oranges, in segments
- Fresh coriander
You can also use Elmira
Cooked Quik Strips, marinated in orange and lime
zest, or heated in a pan with sesame oil, |

In a food processor combine all dressing ingredients. Process
until smooth. Assemble salad by using lettuce as a base and
sprinkling cucumbers, red onions, sprouts, peppers and chopped
coriander over top.
Place chicken on top. Serve with a few orange segments and
dressing. |
