Thai Chicken Salad
 

 
  INGREDIENTS:  
 
Tender L�Oven Breaded Fillets sliced and piled on top.

Dressing:
  • 3 cloves garlic, finely chopped
  • � cup orange juice
  • Juice of 1 lime
  • 1/3 cup rice wine vinegar
  • � cup roasted peanuts of � cup peanut butter
  • 3 tbsp soy sauce
  • 1 Tbsp sugar
  • 1 small dried chili

Salad

  • 1 Head Boston lettuce
  • Medium cucumber grated
  • � sliced red onion
  • 1 cup bean sprouts
  • 1 medium red pepper, chopped
  • 1 Tbsp sesame oil
  • 2 oranges, in segments
  • Fresh coriander

You can also use Elmira Cooked Quik Strips, marinated in orange and lime zest, or heated in a pan with sesame oil,

 
DIRECTIONS:
 
In a food processor combine all dressing ingredients. Process until smooth.

Assemble salad by using lettuce as a base and sprinkling cucumbers, red onions, sprouts, peppers and chopped coriander over top.

Place chicken on top. Serve with a few orange segments and dressing.
